ORANGE, LEMON, GRAPEFRUIT AND VEGETABLE SOUP


INGREDIENTS:
1 Leek
1 Onion
½ tbsp Olive Oil
4 Med Potatoes peeled and cubed
4 Large Carrots scraped and slices
2oz Bran
1 Orange
1 Lemon
1 Small Grapefruit
1oz mix of Walnuts; Pumpkin seeds and Sunflower seeds
½ tbsp stem Ginger Syrup
2 peices Stem Ginger grated
1 pinch each of grated Cloves; Cinamon; grated Nutmeg
1 tsp each of chopped Parsely; Corriander & Basil
2 pints veg Stock (can use 2 pints of wates and 2 tock cubes)

METHOD:
1. Heat the oil in a 3 pt Saucepan
2. add chopped Leek and chopped Onion
3. cook over medium heat until soft and golden
4. cut fruit in half, grate zest and juice
5. finley chop nuts and seeds
6. add all ingredients to pan
7. stir until well mixed
8. Cover and simmer gently for about 40 minute
9. This soup can now be served. Can be liquidised if preferred

SERVING SUGGESTION
decorate with a thread of cream in each bowl and a small sprig of parsley
