1 smoked mackerel fillets, flaked into small pieces
1 onion, coarsley chopped
3 large chopped garlic cloves
3/4 cup milk
1/2 cup cream cheese
1/2 cup drained oil-packed sun-dried tomatoes, finely chopped
1 lb spaghetti
1 oz finely grated parmesan (1/2 cup)
1tble sp olive oil
salt & pepper to taste


1. spread oil over a heavy fring pan
2. Cook makerel pan over moderately low heat for about 5 mins, stirring occasionally, until cooked through
3. remove from the pan and set aside
4. Add onion, and cook, stirring occasionally, until softened and golden colour, about 8 minutes
5. add garlic, salt, and pepper and continue to cook till garlic is transparant
6. Add milk, cheese,tomatoes and mackerel and simmer until slightly thickened, 2 to 3 minutes
7. Remove from heat
8. Cook pasta in a pan of boiling salted water until al dente
9. Reserve 1 cup cooking water, then drain pasta in a colander
10. Put pasta into a serving bowl
11. If sauce is too thick add a little oof the cooking water to thin
12. Pour sauce over pasta
13. sprinkle parmesan over dish and serve
