CHICKEN & RICE

INGREDIENTS: 1 uncooked chicken cut into pieces
1 cup rice (uncooked)
1 cup frozen mixed vegetables
250 grams (½ lb) mushrooms (optional)
1 packet onion soup
1 cup water
2 tablespoons tomato sauce or ketchup (optional)

METHOD:
1. pre-heat oven to 180 C, 350 F, gas 4
2. place rice on bottom of oven dish
3. place vegetables and sliced mushrooms evenly over rice
4. place chicken on top of vegetables
5. sprinkle dry onion soup over all
6. mix water with tomato sauce (ketchup)
7. pour water mix over all in dish
8. cover and bake for approximately 1½ hours
9. uncover dish and continue cooking for another ½ hour
