2 cups Basmati Rice
3 cups of boiling water
salt and Pepper to taste
3 tbsp Corn oil
2 eggs
1 clove garlic (crushed)
6 spring onions (finely chopped)
6oz petite pois (frozen)
1 tbsp soy sauce


1. Add rice and a pinch of salt to water
2. cook on medium heat till water is absorbed and rice is tender
3. rinse under cold water and drain well
4. put rice to one side
5. Beat eggs
6. Lightly oil a wok, and heat until hot
7. Add eggs and stir fry till lightly scrambled
8. transfer to a bowl and put to one side
9. add remaining oil to pan and heat till hot
10. add garlic and rice and stir fry for 1-2 mins
11. add spring onions and petite pois
12. stir fry for a further 3-4 mins
13. gently stir in eggs and soy sauce
14. season with salt and pepper
15. serve.
