1 red pepper
1 yellow pepper
1 orange pepper
1 red onion
8 mushrooms
1 aubergine (sliced)
1 corgette (sliced)
4 tomatoes (cut into halves)
½lb Haloumi, cubed (optional)
8 cloves garlic sliced
dsrt sp chopped chives dsrt sp chopped parsley
dsrt sp chopped tarragon
salt & pepper to taste
1 tble sp olive oil


1. heat oven to gas mark 7
2. cut peppers into quarters then halve each piece
3. top & tail onion and cut into quarters then break apart
4. cut aubergine slices into 4
5. put all vegetables and haloumi into a bowl
6. sprinkle on herbs, salt & pepper
7. drizzle oil over all
8. mix all together so that oil and herbs cover all
9. leave to stand for ½ hour
10. Place tomatoes cut side up on a baking tray
11. arrange all other vegetables, haloumi (if using) and garlic around the tomatoes (in a single layer)
12. bake for 30 minutes

Serve as a vegetable with kebabs or can be eaten on its own with bulgar wheat or rice.

Try sprinkling it with stuffed green olives
