4oz fresh breadcrumbs
1 lb chestnuts with shells and inner skins removed
1 tble sp sunflower oil
1 beaten egg
salt & pepper to taste
enough stock to just cover chestnuts


1. boil chestnuts in stock till quite soft
2. drain and grind to a pulp
3. add all other ingredients and mix together
4. if at all dry , add a little of the stock

this stuffing is really good with the Xmas turkey
