TIPS for MARINADES


The marinades & rubs, some of the sauces too, taste wonderful with all types of meat, poultry and fish.

They can also be used with mixed vegetables, such as Aubergenes, corgettes, mushrooms etc. and grilled on the Bar-B-Q or a double sided electric grill

The vegetables need to be left for at least 1 hour in the marinade.

The meats tend to need more time in the marinade as it takes longer to penetrate. If it can be left to stand for about 8 = 10 hours, covered in the fridge, it will enhance the flavour.

Don't be put off by the standing time you can still get a good flavour leaving for only an hour, but the longer the tastier.

I have put some of the marinade recipes together in the various catagories, using different meats, poultry, fish and vegetables. But the sky's the limit. Try diferant herbs and spices yourself and experiment.
