MUM'S LOCKSHEN PUDDING


INGREDIENTS:

12oz flat broad noodles
1 lb cottage cheese
½ pt sour cream
¼ lb melted butter
½ cup sugar
3 eggs
¼ cup raisins
pinch salt
1 tsp vanilla essence
1 tsp powdered cinamon
2 cups milk

METHOD:

1. cook noodles in boiling water till softened but not soggy
2. drain off the water
3. add sour cream, butter and cheese
4. simmer for 9-10 minutes
5. pour into a baking dish
6. in a bowl, lightly whisk eggs
7. mix in the rest of the ingredients
8. pour egg mixture into noodles. DO NOT MIX
9. cover and put into fridge over night
10. pr-heat oven to Gas 4
11. take out of the fridge ½ hr before cooking
12. place in oven for 1 - 1½ hours
13. check after 1 hr. Should be golden brown
14. eat while hot
