RASPBERRY ZABAGLIONE


INGREDIENTS:
16 egg Yolks
2oz Caster Sugar
7fl oz Marsala Wine
2lb fresh raspberries

METHOD:
1. Fill a pan ½ full with water
2. Boil water
3. Combine Eggs Sugar and Wine in a bowl
4. Sit bowl over the pan
5. continually whisk the ingredients until thickens
and the sauce forms soft peaks
6. Spoon the sauce over the raspberries
7. put the dish under the grill
8. Serve once the mixture starts to turn brown
