BOILED FRUIT CAKE


INGREDIENTS:

1lb Mixed fruit
1 tsp bicarb
1 cup Water
1 cup sugar
¼lb marg
2 eggs
2 cups self raising flour

METHOD:

1. Put fruit; bicarb ; water; sugar and marge into a saucepan
2. bring to boil stirring all the time
3. simmer slowly for ¼ of an hour
4. leave to cool for ¼ of an hour
5. whisk eggs
6. add eggs and flour to mixture and mix well
7. pour into a loaf tin lined with grease proof paper
8. bake for 2 hrs at gas mark 2
