CRAB APPLE & ROWAN JELLY

INGREDIENTS:

2 lb Crab Apples
2 lb Rowan Berries
enough water to cover
1lb sugar per 1pt juice

METHOD:

1. wash and chop apples including skin and core.
2. cover with water and boil till soft.
3. strain slowly through fine cloth.
4. pour liquid back into pan
5. add sugar.
6. fast boil until a teaspoon of the liquid dropped on a plate sets.
7. start testing after approx 10 mins.
8. pour into pots, cover and cool.
