APRICOT JAM


INGREDIENTS:

1 lb dried apricots
3 lb sugar
3 pints cold water
juice of 1 large lemon

METHOD:

1. wash apricots thoroughly
2. cut each fruit into 4
3. put into a bowl and cover with the water
4. leave fruit to soak for 24 hours
5. Next day, put fruit with the water into a preserving pan
6. bring to the boil
7. reduce heat ands simmer for 45 minutes
8. add sugar and lemon juice
9. stir till sugar has melted
10. turn up heat and boil hard till sets when tested
11. whilst still warm pour into pots
12. evenly distribute almonds to each pot
13. when cold, cover with waxed paper and tie, or use polythene wrap and an elastic band

Will keep well if air tight
