LEMON CURD


INGREDIENTS:

4 oz unsalted butter
4 egg yolks
2-3 lemons
Żlb granulated sugar

METHOD:

1. Melt butter in a pan inside a larger pan of boiling water.
2. Beat eggs
3. grate rind of lemons
4. Squeeze and strain the juice
5. add juice and grated rind to the butter
6. stir in beaten yolks
7. continue to stir until starts to go cloudy and thickens (DO NOT boil)
8. Pour into warm jars

Will keep for a couple of weeks in the refridgerator
